Oatmeal Chocolate Cookies

Based on oats, olive oil and brown sugar, we make healthy, delicious and timeless chocolate cookies.


They make a complete breakfast on their own. For those times when you have to leave the house in a hurry or just before exercise, they give a delicious energy boost.

These cookies love experimentation and go very well with other ingredients such as raisins, dried cranberries and nuts. Cinnamon and molasses give an interesting different flavor.

Ingredients for 30 cookies

  • 300 g. olive oil
  • 200 g. brown sugar
  • 100 g. orange juice
  • 400 g. flour
  • 200 g. whole grain oats
  • 2 tbsp. baking powder
  • 1/2 tsp salt
  • 160 g chopped walnuts
  • 160 g chopped couverture pieces or dark chocolate chips

Step 1: In a large bowl, add the olive oil, orange juice and sugar and mix well.

Step 2: Add the dry ingredients, the flour, baking powder, salt, chocolate and chopped walnuts and continue mixing lightly with your hands.

Step 3: Preheat the oven to 160 degrees C and continue mixing.

Step 4: Shape into walnut-sized balls and place them on a baking sheet lined with baking paper, spaced a little apart, as they will rise slightly and spread out on the baking sheet.

Step 5: Bake at 160 degrees C for 15-20 minutes.


TIPS

Sometimes I like to use different types of chocolate, as it ensures a greater dose of chocolate in each cookie. For example, 100 g. couverture cut irregularly with a knife and 60 g. chocolate drops, instead of just drops or just couverture. You can also add 60 g. Raisins or cranberries (instead of drops)

Oats help the body get going in the morning and create a strong feeling of satiety.

It is a very good source of fiber and has a high content of vitamins (iron, vitamin B1, magnesium, phosphorus, potassium), minerals and antioxidants, which are believed to protect the cardiovascular and digestive systems.

I prefer organic whole grain oats which are not much more expensive and are even healthier.

Always remember that a pinch of salt in sweets enhances their taste.

You can add 1 tsp. molasses which gives these cookies a fantastic taste. If you don’t have any, that’s okay. Don’t replace it with anything else. Cinnamon also gives a special taste.

If you don’t have walnuts, you can use almonds, with the same excellent results.
