A cheesecake of unparalleled flavor and simplicity, for which only a few ingredients are needed: A layer of crushed biscuits, a thick cream cheese filling and fresh fruit.

It contains no sugar, only honey, and the cream is made very quickly while the lime and mint give a pleasant freshness and aroma.

It will take you about 30 minutes to prepare it but it needs another 8 hours to set in the refrigerator.

Ingredients for 8 servings

For the base:

420 g. digestive biscuits

100 g. butter, melted

1 tbsp. honey

a little salt

For the cream:

600 g. cream cheese

1 cup of heavy cream

3 tbsp. Honey

1 vanilla

zest of 1 lime (or lemon)

4 sheets of gelatin

3 tbsp. lukewarm water

For the garnish:

500 g. strawberries cut in half (or any other seasonal fruit, e.g. cherries, blueberries)

mint leaves

Step 1: Put the biscuits for the base in the bowl of a mixer or food processor and crush them. Transfer them to a bowl and add the butter, honey and salt. Mix well.

Step 2: Grease a 22 cm diameter tart pan well and spread the mixture evenly on the base and walls and put it in the refrigerator for half an hour.

Step 3: Soften the gelatin sheets for 5 minutes in cold water and then drain them.

Step 4: Beat the cheese, milk, honey and lime zest with a mixer.

Step 5: In a bowl, pour the lukewarm water, add the softened gelatin and mix well with a pastry wire to melt. Then pour the cream mixture into the bowl. Mix well and wait a few minutes for it to start to set. Add the mixture to the tart pan.

Step 6: Put the tart in the refrigerator for at least 3-4 hours to set.

Step 7: Garnish with a few strawberries and it is ready to enjoy.

Tips

  • It is said that the history of cheesecake begins in ancient Greece, with the first testimonies having been written by the Ancient Greek physicist Aegimos.
  • Instead of gelatin, we can use agar-agar, which is a popular vegetarian alternative to gelatin. To prepare agar, the algae are first boiled, then cooled, cleaned and finally dried. It is available in various forms on the market such as flakes, powder or granules.
  • The cheesecake topping is a matter of taste. The most classic version calls for jam or a spoonful of sweet. We can add chocolate syrup or a light strawberry coulis along with the freshly cut fruit.
